Eating my leftovers for lunch, I decided I should share two recipes I tried out this weekend. Saturday night I cooked this recipe for apple-spinach chicken from Health magazine. Weirdly there were no chicken breasts for sale at the Pathmark closest to my house, so I made the recipe with thighs (cooking the thighs longer). I think it would have come out better with the chicken breasts the recipe called for, but the flavor was great — I love the cider-y taste it gave the chicken. Then on Sunday a couple of my girlfriends came over in the afternoon and we ate this tomato, garlic and potato frittata from (it originally ran in magazine, and I found it in The GourmetGourmet Cookbook). This was also a good recipe, though not a show-stopper. I'll probably use the idea behind each of these recipes again, but might try switching things up a bit. (And I'd add more cheese to that frittata!)
